Tips and swaps

Why is my slush rock-solid instead of slushy?
You either skipped the scraping or let it freeze too long. Scrape with a fork every 45 minutes so it freezes in loose flakes, and pull it the moment it reaches a spoonable granita stage rather than a solid block.
Can I make it ahead?
Sort of. The granita can sit frozen for a few hours, but it firms up over time, so let it soften and rescrape before serving. The blender method is best made to order.
Does diet soda work?
