Dr Pepper pot roast is a beef chuck roast seared, then slow-cooked on low for 8 to 10 hours on a bed of carrots, potatoes and onion in a can of Dr Pepper mixed with broth, ketchup, Worcestershire and a splash of vinegar, until it is fork-tender in a sweet, savory gravy. I would not expect it to taste like soda; the Dr Pepper should come through as a little sweetness and maybe a faint cherry note behind the beef.

It is not a new idea, either. A Taste of Home writer found a vintage 1965 booklet, Cookin' with Dr Pepper, created by the soda company, which suggests more than 50 ways to use Dr Pepper and has the pot roast on its cover.

What does Dr Pepper do to a roast?

Mostly it seasons the braise. Dr Pepper adds sweetness and its own flavor to the cooking liquid, and the Worcestershire, vinegar and ketchup are there to balance that sweetness with something savory and tangy. The color of the gravy comes from several places: the browned bits from searing, the dark soda, the Worcestershire and the ketchup. The optional cornstarch at the end is what thickens it.

Does Dr Pepper tenderize meat?

Taste of Home says it helps: it describes Dr Pepper as an acidic ingredient, with a pH of about 2.9, that works like vinegar or citrus juice in a marinade to break down fibers in tough cuts. In this recipe, though, I would put most of the tenderness down to time: chuck is a tough, well-marbled cut, and 8 to 10 hours on low is what should get it to fork-tender.

Can you put a frozen roast in the slow cooker?

No. The USDA's Slow Cookers and Food Safety guidance is to always thaw meat before it goes into a slow cooker, because frozen meat can spend too long thawing at temperatures where bacteria multiply. Thaw the roast in the fridge a day or two ahead.

What to serve with it

The potatoes and carrots cook in the pot, so it is a whole meal. Mashed potatoes are a common side if you leave the potatoes out, and Dr Pepper baked beans make it a cookout plate. Ingredients

Roast

  • 3 to 4 lb boneless beef chuck roast, fully thawed
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 large yellow onion, cut into wedges
  • 1 lb carrots, cut into 2-inch pieces
  • 1 1/2 lb small yellow potatoes, halved

Dr Pepper braising liquid

  • 1 can (12 fl oz) regular Dr Pepper
  • 1/2 cup beef broth
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme

Gravy (optional)

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

Sear

  1. Pat the roast dry and season all over with the salt and pepper.
  2. Heat the oil in a cast iron skillet over medium-high heat and sear the roast until deeply browned on all sides, 8 to 10 minutes in total.

Slow cook

  1. Put the onion, carrots and potatoes in the slow cooker and set the roast on top.
  2. Whisk the Dr Pepper, broth, ketchup, Worcestershire, vinegar, garlic and thyme together. Pour a little into the hot skillet, scrape up the browned bits, then pour it all over the roast.
  3. Cover and cook on low for 8 to 10 hours or on high for 5 to 6 hours, until the beef pulls apart easily with a fork.

Finish

  1. Lift the roast and vegetables onto a platter and keep warm.
  2. For gravy, skim the fat from the liquid, stir the cornstarch and cold water together, whisk it into the liquid, and cook on high, uncovered, for 10 to 15 minutes until thickened.
  3. Slice or shred the beef and serve with the vegetables and gravy spooned over.

Notes & tips

  • Always thaw the roast first. A frozen roast spends too long thawing in a slow cooker before it reaches a safe temperature.
  • I use regular Dr Pepper for the sweetness it adds to the gravy.
  • Searing is optional. It browns the outside of the roast and leaves browned bits in the skillet to scrape into the liquid.
  • To make it in a Dutch oven instead, braise covered at 300°F for 3 to 3 1/2 hours.
  • Refrigerate leftovers within 2 hours of cooking and use them within 3 to 4 days, per USDA FSIS, or freeze them. They should make good sandwiches with a spoonful of Dr Pepper barbecue sauce.
